This is the meal that cinched it for my move to NM decades ago. It's called Carne Adovada and it's a NM cuisine signature dish. This one is at Nachos in Moriarty NM where the ROOTS 66 show is this weekend! April 4 and 5 dealers coming from eight different states and the offerings will be amazingly varied. Native American clay figurines, jewelry, gems and minerals, barbed wire, miniature bird houses, Live woodcarvers! Oh and thousands of bottles and insulators. And this lunch is Delicious!!
