One of the major reasons folks have enjoyed the Merritt Insulator Shows and earlier, the Fort Langley Insulator Shows is Bev's chili. Tried and tested over many years, Bev's CHILI has withstood the test of time. Recently, we added a second CHILI variety, and over the last 3 shows we have found collector preference is just about 50 / 50. The only definite conclusion about the CHILI is that everyone likes it. Here she is about a week before the show cooking the meat, before adding the beans and spices. Just in case you think I did nothing to get ready for the show, I had to measure out all the spices. Now, there is a major responsibility, counting out garlic cloves and bay leaves, and all the secret ingredients. Thanks Bev, as usual, the food was wonderful.
